Maggie Beer’s Welsh Rarebit

Welsh Rarebit
Prep time 10 minutes. Cooking time 10 minutes. 10 Serves.
Ingredients for Welsh Rarebit
400g Cheddar cheese
150g Beer, ale works well
30g Worcestershire sauce
30g Butter, melted
5g Mustard powder, Dijon or mild
300g Sourdough French stick, cut on an angle into 3cm thick slices, weighing 30g per slice
Method for Welsh Rarebit
- Preheat the oven to 170oC.
- Line baking trays with baking paper.
- Combine all of the ingredients except the bread in a bowl and stir to combine.
- Generously top each slice of bread with the cheese mixture (around 50g).
- Place on baking trays and bake for 8-10 minutes or until bubbling and browned.
- Remove from oven and serve hot.
