Lemon Melting Moments

Nostalgia overload! A much-loved favourite treat.
Serves 10
Prep Time: 30 minutes
Cook Time: 20 minutes
Ingredients
400g Flour, plain, spelt
200g Cornflour
200g Skim milk powder
160g Icing sugar
450g Butter, room temperature
Lemon icing:
60g Butter, room temperature
250g Icing sugar
20g Lemon juice, fresh 3g Lemon, zest
Method
- Preheat oven to 160°C, grease and line trays with baking paper.
- Sift the flours together.
- Beat the icing sugar, butter and skim milk powder until light and creamy, add the flours and beat until well mixed.
- Roll the dough into 30g balls, space on the baking tray. Press down on the biscuit dough to flatten slightly.
- Bake for 15 to 20 minutes then set aside to cool.
- Lemon icing:
- Whip the icing ingredients together in a bowl until light and creamy, then place in a piping bag.
- Pipe 15g of the icing onto the flat side of the cooled biscuit, then sandwich it together with another biscuit. Repeat the process until all the biscuits are complete.
