Maggie Beer shares a pineapple slice recipe with the Australian Carers Guide.

Serves: 15

Pineapple Slice Ingredients

340g packet vanilla cake mix

2/3 cup melted butter

400g can crushed pineapple, drained

250g sour cream

Pineapple Slice Method

Preheat the oven to 180C.

Line a 30 x 20cm baking tin with baking paper.

In a bowl, combine the cake mix and melted butter to form a dough.

Spread the dough evenly across the baking tin and bake for 15 minutes.

Meanwhile, combine the drained pineapple and sour cream.

Spread evenly over the base and return to the oven for another 15 minutes.

Let cool then chill in the fridge (this gives the base time to set).

Optional

Sprinkle generously with shredded coconut before baking for the final 15 minutes.  The combination of pineapple, cream and coconut make this slice more like a Pina Colada Slice – it is really lovely.
