Maggie Beer’s Dark Chocolate Mousse

Serves 10
Dark Chocolate Mousse Ingredients
360g Cream, whipped
60ml water
115g castor sugar
1 egg, whole
2 egg, yolks
230g dark chocolate, good quality
Dark Chocolate Mousse Method
1. Whip the cream to firm peaks.
2. Pour the water and sugar into a medium-sized saucepan, over a low heat to dissolve the sugar.
3. Turn the heat to high and heat the sugar syrup to 121°C.
4. Place the egg and yolks into a mixing bowl. Using an electric mixer, whisk on high speed until pale and aerated.
5. Reduce the speed to medium, add the sugar syrup in a steady stream, then continue to whisk until room temperature.
6. Melt the dark chocolate in the microwave, add the chocolate to the egg mix and then fold in the cream- mixing until just combined.
7. Place in a piping bag and pipe into your selected serving dishes.
8. Set in the fridge until serving.
