Ingredients for Egg & Chive Sandwiches

650gEggs, whole, poached, chilled
30gMayonnaise, whole egg
8gCurry powder
5gChives, fresh, snipped finely
1gSalt
0.5gPepper
20eaBread, fresh, sandwich sliced, white or wholemeal
60gButter
100gLettuce, iceberg, shredded

Method for Egg & Chive Sandwiches

  • In a large bowl, mash the eggs using a stainless-steel whisk.
  • Add the mayonnaise, curry powder, chives, salt and pepper and mix well. Taste to check seasoning.
  • Butter the bread, then spread equal amounts of curried egg onto each sandwich and top with shredded lettuce, then close the sandwich.
  • Remove the crusts and cut into finger sandwiches or simply cut diagonally into 4 triangles.
