Skip the Shells: Poach your way to the perfect curried egg sandwich!

Makes : 10 serves
Ingredients for Egg & Chive Sandwiches

| 650g | Eggs, whole, poached, chilled |
| 30g | Mayonnaise, whole egg |
| 8g | Curry powder |
| 5g | Chives, fresh, snipped finely |
| 1g | Salt |
| 0.5g | Pepper |
| 20ea | Bread, fresh, sandwich sliced, white or wholemeal |
| 60g | Butter |
| 100g | Lettuce, iceberg, shredded |
Method for Egg & Chive Sandwiches
- In a large bowl, mash the eggs using a stainless-steel whisk.
- Add the mayonnaise, curry powder, chives, salt and pepper and mix well. Taste to check seasoning.
- Butter the bread, then spread equal amounts of curried egg onto each sandwich and top with shredded lettuce, then close the sandwich.
- Remove the crusts and cut into finger sandwiches or simply cut diagonally into 4 triangles.

- Save time on peeling by poaching eggs instead of hard boiling.
- The whisk effortlessly cuts through the whites and mixes the yolks, leaving you with even pieces and a creamy texture.
