Chicken & Paw Paw Rolls Ingredients

– 100g pawpaw, peeled and sliced 

– 1 cup (140g) chopped, cooked chicken breast

– 100g snow pea sprouts 

– 3 x 16cm sheets (12g each) rice paper 

Chicken & Paw Paw Rolls Method

Combine the pawpaw, chicken, and snow pea sprouts in a bowl. Toss to combine. 

Place 1 rice paper round in a medium bowl of lukewarm water for 15 seconds or until just soft. 

Place on a clean tea towel or paper towel. Arrange one-third of the chicken mixture along the centre of the rice paper round (if you have, add fresh coriander or mint; flavour without the calories). Fold the ends in and roll up firmly to enclose the filling. Repeat with the remaining rice paper rounds and filling. 

Optional: Serve with 1 tablespoon (20ml) Sweet Chilli Sauce.
