Maggie Beer’s Prawn and Sesame Toast

An Asian-inspired favourite that can be prepped ahead of time
Prep time 45 minutes Cook time 5 minutes Makes 20 serves

Prawn & Sesame Toast Ingredients
1kg Prawn meat, raw, roughly chopped
40g Spring onions
20g Garlic, minced
35g Ginger, peeled, minced
10g Caster sugar
60g Egg whites
10ml Sesame oil
10g Salt
40ml Fish sauce
700g Bread (20 slices), white sandwich loaf 50g
Sesame seeds, white
Prawn & Sesame Toast Method
- Place the ingredients for the prawn mixture into a blender and pulse until smooth
- Spread 60g of the mix evenly and to the edges of each slice of bread
- Sprinkle sesame seeds evenly over the top of each slice
- Place on lined trays and in the freezer for 30 minutes or until semi frozen
- Once semi frozen cut each slice of bread into 4 triangles and place back into the freezer until you’re ready to cook
- Preheat deep fryer to 175°C, cook for approximately 4 minutes or until golden brown
- Drain on paper towel and serve with sweet chilli and lime dipping sauce.
