Apple Cake

A moist, gently spiced cake layered with cinnamon-brown sugar apples.

PREP TIME: 30 minutes
COOKING TIME: 60 minutes
SERVES: 10

INGREDIENTS
200g Apple, Granny Smith, fresh, raw, sliced
4g Cinnamon, ground
25g Brown sugar, soft
138g Self raising flour, wheat
50g Skimmed milk powder
25g Almond meal
2g Baking powder
150g Sugar, caster
100g Egg, beaten
90ml Sunflower oil
40ml Orange juice, fresh squeezed
4g Vanilla extract


METHOD

  1. Preheat fan forced oven to 160°C.
  2. Line cake pan(s) with baking paper.
  3. Mix apples, brown sugar and cinnamon in a bowl.
  4. Sift flour, skim milk powder, baking powder together.
  5. Combine egg, oil, orange juice and vanilla, mix well.
  6. Stir liquid into dry mixture and mix to a smooth batter.
  7. Place half the batter in the cake pan, top with the apple slices.
  8. Cover with remaining batter cake mixture (should be about 3-4cm deep before baking.)
  9. Bake for 50 minutes then check with a skewer to determine if cake is cooked through.
  10. If cake requires further time check every 10 minutes until done.
  11. Allow to cool fully.
  12. Portion into 60g serves.
